Cucumbers in Vinegar

It's good!! Not really a recipe, more of an idea. I like eating these (on occasion) with lunch. They are extremely quick and easy to make. The natural cucumber flavor is promident with a hint of vinegary tang.

SERVES 1 (change servings and units)

Ingredients

  • 1/2 cup cucumber, sliced in bite sized pieces (I prefer peeled slicing cucumbers)
  • 2-3 tablespoons vinegar

Directions

  1. 1
    Chop up cucumber, place in a bowl or small container with a lid.
  2. 2
    Add vinegar, stir to coat the cucumber in vinegar, or gently shake the container with lid.
  3. 3
    Enjoy immedately or put in the fridge or pack in an insulated lunch kit with an ice pack for a few hours with your lunch.
  4. 4
    Note - this recipe is best cold.

I also love cukes this way, however I add a tiny bit of sugar to offset the acidity of the vinegar. Kind of a sweet and sour thing.

    LUv2BaKE Try a few variations. Add items like onion, tomatoes, olive oil, or jalapeno peppers to make it different. Different types of vinegars are a good choice too. I'm not going to rate the recipe since I didn't make it as posted. I find that the cucumber with vinegar type of salads are best when refrigerated for a while too.

    This is the way I grew up eating cucumbers. My mother always used apple cider vinegar, and they were great!
