I also love cukes this way, however I add a tiny bit of sugar to offset the acidity of the vinegar. Kind of a sweet and sour thing.

My mom served cucumbers this way too! Sprinkle with s & p... I love them.

LUv2BaKE Try a few variations. Add items like onion, tomatoes, olive oil, or jalapeno peppers to make it different. Different types of vinegars are a good choice too. I'm not going to rate the recipe since I didn't make it as posted. I find that the cucumber with vinegar type of salads are best when refrigerated for a while too.

This is the way I grew up eating cucumbers. My mother always used apple cider vinegar, and they were great!
