Cucumber-Zucchini Salad

Another recipe I found on-line while searching for South Africa recipes to post for ZWT.

SERVES 8 (change servings and units)

Ingredients

Directions

    For the dressing: Dissolve sugar in hot water then blend with the vinegar, salt, and peppers. .
  2. 2
    Arrange in alternate layers: 2 medium CUCUMBERS, scored with a fork, not peeled but sliced very thinly and 2 medium ZUCCHINI, raw, same size as cucumbers, prepared the same way.

    Drain any water formed from cucumbers before adding the dressing.
  4. 4
    Allow vegetables to marinate in the dressing at least 1 hour before serving.
  5. 5
    Serve with meat, fish, or poultry.

Loved this easy salad which we served with Easy Grilled Chicken Teriyaki. The only change I made was including some cherry tomatoes. Yummy! Thanks for sharing this keeper which we will be having often this summer!

    Having lamb chops tonight and needed a side which was light enough to balance the richness of the meat but flavorful enough to hold it's on on the palate. This salad reached that perfect balance and made a delicious side. I loved the crunchiness of the vegetables and the spicy bite along with the pickling combination of sweet and tart. I used Splenda for the sugar making this 0 points for WW. Thanks diner524. Made for Zaar Stars Tag Game.

    Nice salad! Wasn't sure I would like the zucchini with the cucumber but, it was great! We love cucumbers so this is definitely a keeper! Made for ZWT4.
