Cucumber Salad

This is a REFRESHING, tangy Salad--low in fat. If you want it creamy and not so low in fat, just add 2 tablespoons mayonnaise. Be sure to slice the cucumbers and onions very very thin! Serve as salad or top open faced sandwiches with it!

SERVES 6 -8 (change servings and units)

Directions

    Mix cucumbers and onions together.
  2. 2
    Mix rest of ingredients together in a closed bowl and give a shake.
  3. 3
    Add to cucumbers, chill till very cold & serve.

    I made this very simple salad tonight to share with my neighbor. He loved it...and...we both decided that the lemon juice and onions made our taste buds come alive! I made this recipe as posted with a few changes. I used half as much dill, I used nonfat sour cream and I added 1/2 c. frozen/thawed peas to make this salad a little bit sweeter. Thank you for posting this and adding to my collection of fabulous recipes. Sincerely, Sherry

    A very good rendition of the classic cucumber salad. I used basil instead of the dill (personal preference). It was very good served as a side with roast chicken breast.

    A Delicious,refreshing, salad. DH loved it. I made it using Armenian cucumbers from our garden. Also added 2 tablespoons lower fat mayoniase to the dresssing & used white wine vinegar, next time I am going to use lemon juice just to taste the difference. We have a lot of cucumbers so I will be making this again soon. Thank you Rita, for this tasty recipe.
