Cucumber Raita, Super Simple, Quick and Easy.

Recipe #191062 | 40 min | 10 min prep | add private note

Another adapted recipe from one of my favourite cookbooks: Step-by-step cookery series " Salads and Summer dishes". I like this because there's no mint, no tomato like in many other raita recipes and the addition of chili powder gives it extra zing. Cooking time includes 30 minutes chilling time. ZWT REGION: India.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
Drain the grated cucumber well so that you squeeze out as much moisture as possible.
  2. 2
Add the yougurt, chili powder, ground cumin (or toasted cumin seeds) and salt and pepper to taste.
  3. 3
Chill 30 minutes in refrigerator and stir well before serving.
  4. 4
Dust the single cucumber slice in paprika and garnish
  5. 5
    Goes well with poppadoms.

Excellent and yummy as you will ever find. All these ingredients are in my Top 10 lists of all time, so I knew this was a winner when I first saw it. I followed the measurements and recipe exactly as written, except for one small change. While my cucumbers were salted and draining, I mixed the yogurt mixture together with all the seasonings and let that hang out in fridge until it was ready to be mixed in with the drained cucumbers. After both items were sitting for about 30 minutes, I drained the cucumbers, patted them dry and then added them to the already chilled yogurt mixture. I am surprised there were cucumbers left at this point, because I keep tasting them and eating them like potato chips. yummy I served this exactly as written and the cucumber that was was no more! I managed to grab a very quick picture of this, but the drool from the friends watching got in the way. Thanks for the recipe kiwidutch! Outstanding Made for PRMR
