Cucumber Nachos

I found this recipe in a low carb cookbook and decided to try them. While you will not confuse them with regular nachos they have a nice crunch and a nice nacho taste. Healthy alongside our vegetarian fajitas tonight!

21 -25 nachos (change servings and units)

Ingredients

    Put the salsa in a strainer to remove some of the liquid.
  2. 2
    Peel and slice the cucumber.
  3. 3
    Put the slices of cucumber into the bottom of a 9x13 pan, without overlapping.
  4. 4
    Discard the extra salsa liquid.
  5. 5
    Put about 1 teaspoons of salsa on each cucumber slice.
  6. 6
    Sprinkle the tops of the cucumbers with the cheese.
  7. 7
    Put about 1 teaspoons of sour cream on top of each slice.
  8. 8
    Serve cold.

    These were really good. I made them for my sister's bridal shower. But I could not get them to stay together when I was testing the recipe earlier; so I modified the assembly process to: cucumber slice, sour cream, salsa, cheese (bottom to top). I would recommend that anyone who makes this recipe try that method. P.S. They are very addictive.

    I made one small change to this. After topping the cucumber slices with salsa and cheese, I zapped them in the microwave for about 1 minute, to melt the cheese, and then topped with sour cream. My son and I both loved them.

    I didn't like them heated-the cucumbers lost their good crunch. But I love the combo cold! Cucumbers with cheese has become my new favorite snack. Thanks for the recipe.
