Cucumber Boats

Cucumbers grow abundantly throughout Eastern Europe and are often combined with sour cream or cheese. This is an easy Yugoslavian recipe and it makes a light appretizer or salad.

SERVES 4 (change servings and units)

Directions

    In a small bowl. combine chopped tomatoes, oil, vinegar, oregano, salt, and pepper. Toss gently until well mixed. Chill until serving time. (at least a few hours).

    Just before serving, add feta cheese to tomatoes and mix well.
  3. 3
    Peel cucumbers and cut them in half lengthwise. Using a melon ball scoop or a spoon, scoop out and discard seeds. Pile tomato mixture into cucumbers.

    Serve right away.

    Preparation time does not include chilling time.

Delicious and PERFECT for a hot summer evening. I used quartered red and yellow grape tomatoes to add color. These are refreshing and different. Thanks!

    This is a fun recipe. It makes a very nice presentation. We enjoyed these for lunch. I think I would like to try making cucumber slices and put the topping on the slices. Thanks for a nice recipe. Made for the Auz Joey Swap #19.

    This is such a fun way to eat your veggies. I used garden cucumbers and fat free feta. The flavors go very well together, and it is an enjoyable dish. Goat cheese would probably be really good in these too.

    I did add a finely minced green onion and used mixed Italian herbs as I was out of oregano. Quick to get to the table!
