Cucumber Asian Salad

Cucumber salad with an Asian twist! A crunchy refreshing salad! Or top a Grilled Tuna Steak Grilled Tuna Steak with it.These cucumbers are very long if you can`t find them use 2 regular cucumbers.

SERVES 4 (change servings and units)

Ingredients

Salad

  • 1 japanese cucumber or hothouse cucumber or English cucumber, peeled and slice i leave some green on for st effect
  • 2 scallions, sliced thin
  • 2 tablespoons light soy sauce
  • 1 teaspoon fresh gingerroot, grated
  • 1 tablespoon cilantro, chopped
  • 1/2 teaspoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sugar
  • salt and pepper
  • hot sauce

Garnish

Directions

  1. 1
    Toss all salad ingredients and top with seeds.

This is really good. Served it with Red Glazed Pork Chops (still waiting for the recipe to post public), and Eggrolls #72124 (the best darn eggrolls ever by the way - thanks riffraff). I did use red pepper flakes and was (gasp) out of hot sause so I subbed juice from a jar of halipeno's I had in the fridge. Really really good!

    This recipe was quick to make which is always a plus. However I don't think I added enough hot sauce so the flavor was a little bland.

    Loved how quickly this came together. I topped with both black and regular sesame seeds. I agree, it would be great with fish or some grilled meat. The flavours could be a little strong for some people though. I think you have to be slightly adventurous to enjoy it.

    I found all the strong flavors of the ingredients (ginger, soy, cilantro, sesame oil, hot sauce and vinegar) a little too overpowering for our taste for more than a few cucumber slices/bites. The first few bites were refreshing, and crispy, but the sauce was too strong to be able to eat much more. I did use a dark sesame oil, and wondered if that was part of the problem.
