Crusty Baked Potatoes

Simple and totally easy to prepare. Works well as a quick side for meatloaf, hamburgers, or Salisbury Steak, or just plain steak!

SERVES 4 (change servings and units)

Ingredients

  • 4 medium baking potatoes, pared (left whole)
  • 2 tablespoons butter, melted (use vegetable margarine if vegan)
  • 1/2 cup cornflake crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Topping

Directions

  1. 1
    Heat oven to 375 degrees.
  2. 2
    Mix together cornflake crumbs and seasonings in a medium bowl/ or medium Ziploc bag.
  3. 3
    Brush whole potatoes with butter.
  4. 4
    Coat potatoes with cornflake crumb mixture.
  5. 5
    Arrange in an un-greased baking pan, 9X9X2 inches.
  6. 6
    Bake uncovered for 1 to 1 1/4 hours or until potatoes are tender.

    Serve with a dollop of sour cream and chives, if desired.

I made these potatoes tonight to accompany Meatloaf With Fried Onions and Ranch Seasoning. I normally make mashed potatoes with my meatloaf, but I knew these would be the perfect match for the savory meatloaf. The crunch from the cornflakes is what really gives your normal ho-hum potato an added somethin somethin. I used seasoning salt in place of regular salt. DS's added their touch of Franks HotSauce in with their ketchup for the topping. A nice comfort type food for all. Made for HolidayTag.~

    These were great potatoes! I loved the crunch from the cornflakes. I kept the skins on ours, as we love them, and of course that is where all the nutrients are that are good for you. Topped with sour cream they were excellent with our meatloaf!

    Andi these potatoes are so good! Loved the crunchy coating from the cornflake crumbs. I baked two potatoes since it was me and DH for dinner tonight so eyeballed the amount of crumbs to roll the potatoes in. Did top with sour cream and chives, very tasty. Served with looneytunesfan's Salisbury Steak and enjoyed a great meal.

    Different. And just as easy as can be. The cornflakes added an unexpected tastiness to the same old roasted potato! Will make this one again.
