Crustless Crab Quiche

This recipe is from a Weight Watches Favorite Recipes Cookbook based on the Quick Start Plus Program. I enjoyed this recipe many years ago when I was on WW.

SERVES 4 (change servings and units)

    Preheat oven to 400°F.
  2. 2
    Spray an 8 inch glass pie plate with a nonstick cooking spray; set aside.
  3. 3
    Thaw and thoroughly drain the crab meat, then flake.
  4. 4
    Mix together crab meat, cheese and onions, then with the back of a spoon, press mixture over bottom and up sides of sprayed pie plate.
  5. 5
    Whisk together in a medium mixing bowl beating eggs, milk, salt, mustard and pepper.

    Pour over crab meat mixture, then sprinkle with paprika and bake until set, about 30 minutes.

    Remove from oven and let stand for 5 minutes before serving.

    Variation: Shelled and deveined cooked shrimp may be substituted for crab meat.

I LOVE this recipe!! My mom gave it to me years ago & it's become a go-to when I want to make an easy, elegant breakfast or brunch dish. Nice to know where it came from. And it's so adaptable--a little imagination & you can create all kinds of variations. Try it and enjoy!

    This is fabulous! I left the directions for my dh to prepare when I got home from aerobics. It tastes wonderful! What a wonderful mingling of flavors. Thanks so much!
