Crumb-Coated Potato Halves

When baking potatoes, I used to cut them in half, brush with butter, then salt & pepper before baking them, cut side up. Here's a dressed up version of that!

SERVES 8 (change servings and units)

Ingredients

Directions

    Preheat oven to 350 degrees F.
  2. 2
    In shallow pan, combine bread crumbs, paprika, salt & pepper.
  3. 3
    Brush sliced side of potato halves with butter, before dipping each into crumb mixture to coat.

    Place in 13"x9" baking dish & cover.
  5. 5
    Bake for 60 minutes, or until tender.

Yummy! We love the touch of heat the paprika gave these tasty potatoes. I think next time I might cut them into large chunks like looneytunesfan did only because we enjoyed the spicy taste of the topping. The chunks would then be coated all around with the delicious ingredients. I served mine with Syd's Crispy Salsa Chicken and a side of frozen corn for a wonderful dinner. Made for Zaar stars tag game. Thanks for posting.

    That's the exact way I'm baking the potatoes in halves. This recipe is great, simple and fast. I couldn't keep myself and I threw in some garlic powder too. Thanks for teaching me another way to eat more potatoes!

    Delicious! What a nice way to spice up baked potatoes. We really enjoyed these. Thanks for another great recipe. I think for variety you could also add some parmesan cheese or bacon bits, but the recipe is good just as written.

    This was so easy and good. I served it with a small dab of fat-free sour cream. My butter and sour cream loving DH, said these are really good. Served with oven "fried" chicken and made a great combo. Thank Syd!
