I'm a whole wheat bread-loving eater myself, but my son lives in a white bread world, so I made this for him. Any chance I can get to sneak some wholesome grains into him, I will. This bread totally concealed the oatmeal AND was truly delicious! So soft and perfect for sandwiches, toast or just eating out of the hand plain. Thanks for sharing this one, KM!

This bread was very, very good! I used bread flour which seemed to help the texture of the bread be less rubbery and chewy than AP flour. The oats really do disappear in the bread and it has a nice light sweet flavor.

I made this bread today and it came out excellent. It rises high and has a lovely light flavor and a nice crust. I cooked it in the regular oven, and used non-instant oats. Some people seem to find this recipe sticky, but with all bread recipes, it is affected by your flour, the humidity, etc. So during the first 5 minutes you can either add water or add flour to get the right consistency for you. In this recipe, you must also consider that the oats will take 10-15 minutes to soak up all the moisture they are going to, so it is best to leave it a little sticky in the beginning to counter that. Another reason I like this recipe is that it has simple ingredients, but the result is extraordinary. Thanks so much for the recipe, I plan on using it often!
