Croissant Breakfast Casserole

Adapted many years ago from a recipe in the Calgary Herald newspaper. It is a no fail recipe! Easy for the beginner cook and looks very elegant. Can be doubled and tripled with no problem! Cook time does not take into consideration overnight sitting time, so plan ahead!!

SERVES 4 (change servings and units)

Ingredients

    Split croissants in half and place bottoms cut side up in one layer in a rectangular casserole.

    Melt butter in a fry pan.
  3. 3
    Saute mushrooms and green onion until tender and liquid has evaporated.
  4. 4
    Set aside.
  5. 5
    Beat together eggs and milk.
  6. 6
    Pour half over croissants, layer mushroom mixture and cheeses on top, then pour over remaining liquid.

    Position croissant tops over the bottoms, cut side down.
  8. 8
    Let stand over night in the refrigerator.
  9. 9
    Bake at 350*F for 25 to 30 minutes or until set.

    Cover with foil if browns too quickly.

This was fun to make and very tasty. I made it for a breakfast pitch-in at work, and brought home an empty pan. It was so nice to offer a meatless casserole that was delicious and attractive. I will definitely make this again. (I did substitute cheddar for the mozzarella and added a pinch of cayenne pepper.) Thanks!

    Absolultely delicious! I took it to work for a birthday breakfast celebration and it was a hit. Everyone immediately wanted the recipe. Yum.

    This was a lovely change for our Sunday breakfast. I didnt have any swiss cheese so just used colby instead. I liked the crunch of the croissants an the creaminess of the melted cheese..I thought I might add some green bell pepper next time and maybe even a litle ham..great recipe, thanks for sharing.

    This is a well written recipe that is quick and easy to assemble. It tasted good, but due to my own preferences I will add some spice to it next time around. Thank you for sharing your yummy recipe MarieAlice.
