Crock Pot Taco Soup

A super easy soup for the crock pot. Adapted from "Fix-it and Forget-it Cookbook".

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Brown beef and onion in a skillet. Drain.
  2. 2
    Dissolve taco seasoning in the water. Combine all ingredients except cheese and chips in the slow cooker.

    Cover and cook on low for 4-6 hours.
  4. 4
    Ladle into bowls and top with cheese. Serve with chips.

This soup was a hit at our house. I did substitute shredded chicken breasts for the beef and also used Rotel tomatoes instead of the diced tomatoes. I think in the future I will use regular tomatoes because my youngest thought the soup was a little too spicy for him. I topped the soup with crushed tortilla chips and some shredded old cheddar cheese. Thanks for posting such an easy and tasty recipe.

    This is a very tasty soup that couldn't be any easier to make. I browned my ground beef the night before so it was ready to just put into the crock pot the next morning. I substituted beef broth for the water and it turned out great!

    This was a good soup. I did make a couple of changes based on other reviews. I used Ro-tel tomatoes and used a hot variety of taco seasoning. With these changes definitely five stars.
