Crock Pot (Slow Cooker) French Dip Roast Beef Sandwiches

I have another tried and true French Dip recipe and also use another great one here on 'zaar, but when I went to make it the other day, I was lacking all of the ingredients to make either...so the following was born. Turns out everyone liked it better than either of my previous ones, so I figured I better post it for posterity!

10 sandwiches (change servings and units)

    Place roast in 4.5 - 6 quart slow cooker.
  2. 2
    Sprinkle with onion soup mix and then pour onion soup and beer over it.
  3. 3
    Drop bouillon cubes in different spots into the liquid and sprinkle pepper and salt to taste over all.

    Cook on high for 4-5 hours. (I guess you could also cook on low for 8 hours or so, but I haven't tried it!).

    Remove meat and slice or shred; return to slow cooker and cover.

    Turn to low and let meat soak up the juices until ready to serve.

    Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.

I'm a salt hater, but I have to say this recipe won me over by NOT being as salty as it looked! It is very important for the taste to slice and return the roast to the broth to soak up the flavor. I was impatient (with the great smells) and had a sandwich early that was good. When I had a sandwich later in the day I was bowled over! Wow. Thanks for posting.

    Wow! I was afraid that this couldn't possibly live up to the rave reviews, but it absolutely did! I used an inexpensive beer, and a store brand soup, and as oniony as it smelled as it cooked, it turned out great! I strained out the onions as my kids don't care for them, and omitted the cheese. Delish!

    It is not very often that I make dinner and all five of us agree that a recipe is awesome--this is one of those recipes! I cooked my 4.5 pound roast on low in the crock pot for 9 hours. I sliced the roast into pretty thin pieces, then put it all back in the crock pot while I melted the provolone cheese onto the rolls in the oven. I served the sandwiches with a cup of the au jus as suggested. The roast has a marvelous flavor and is absolutely fall apart tender. I will be making this delicious recipe again soon! Thanks for a keeper, Karen.

    OH MY GOSH! This recipe is SO GOOD! My whole family LOVED it! My store didn't carry the Progresso French Onion soup so I had to settle for the Campbell's condensed with a can of water added. Even though I had to change the recipe a little it came out juicy, tender and amazing! I used sharp cheddar on buns toasted in the broiler then added the meat. YUM! Thanks for the wonderful recipe!
