Crock Pot Pork Roast and Sauerkraut

I used to manage a doctor's office, and our Blue Cross rep told me that her family made this every year for New Year's. Throw it in the crock pot on New Year's Eve before you go out, and dinner the next day will be ready; all you have to do is fix the mashed potatoes. Slow, low cooking makes a roast that is very tender. Delicious!!

SERVES 4 -6 (change servings and units)

Ingredients

  • 2 lbs pork roast

  • 1 (27 ounce) can sauerkraut, rinsed and drained

  • 1 (1 1/4 ounce) package dry onion soup mix
  • 2 cups water
  • 1/2 cup brown sugar

Directions

  1. 1
    Place pork roast in crock pot.
  2. 2
    Pour sauerkraut over pork roast.
  3. 3
    Sprinkle the onion soup mix and brown sugar over the pork and sauerkraut.

    Pour the water over everything.
  5. 5
    Cook on low for 24 hours.

    Serve over mashed potatoes.

it was really good..i used some of the sauerkraut juice and apple juice for the water...abit less of the brown sugar...it was falling apart tender...will use the leftover kraut on brats tomorrow..i served it with mashed potatoes and green beans

    I was really excited about making this but it just didn't turn out as I expected. I will say up front that, after reading the other reviews, I decided to sub the 2 cups water with part sauerkraut juice (I got the bagged kind) and half apple juice. Halfway in I realized I didn't have any apple juice in the house and used some leftover beef broth from the night before's dinner. I think that was the big mistake that I made. The sauerkraut was quite bitter even after teh 1/2 brown sugar. The meat itself was very tender and barely needed a knife to cut but didn't have that much flavor all in all. I will attempt this recipoe again but be sure to use all apple juice or water for the liquid and maybe dry rub the roast for awhile before putting in the slow cooker to soak in more flavor.

    I will be making this today for the 3rd time, just forgot to review it. We absolutely love it, this is the only way I make pork and sauerkraut now. My daughter-in-law went nuts when she ate it, she thought it was sooo good. I have to watch the high sodium content so I rinse the sauerkraut several times and by the way the stuff in the bag is so much better than canned. I also only use half of the onion soup (2 T.) again because of the sodium. I used one of those little 5.5 fl. oz. cans of apple jusice in place of the water ( I didn't want so much liquid) and threw in some roughly chopped raw onion, probably about a cup. We love onion cooked with pork and sauerkraut. I used western ribs trimmed of all visible fat and browned for our pork, again just a personal favorite and splenda brown sugar. The reason I made most of the changes is because hubby has heart problems and this is one of those rare special meals to serve that he probably shouldn't eat. I am going to try the crock pot today, the other 2 times I was short on time and simmered it stove top. Delicious!

    Had a cold spell and a pork loin roast in the freezer add one DH from Hamburg and you have a winning recipe! I substituted the liquids for white wine and apple juice and threw 2 x 100ml apple sauce fruit cups sitting in the fridge - excellent recipe - thanks so much!
