Crock Pot Chicken and Stuffing

This dish is so easy and everyone that has tried it has absolutely loved it. Just throw it in the crock pot and it will be done in time for dinner.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Place chicken breasts in the bottom of crock pot.

    Pour dry stuffing mix over chicken.
  3. 3
    Mix sour cream and soup and pour over chicken and stuffing.
  4. 4
    Cook on low for 4 hours.
  5. 5
    Fluff all ingredients and serve.

I expected to have dry chicken based on the use of chicken breasts and the 4 hr cook time. I, however, am very familiar with how chicken cooks in my crockpot (overnight for thighs and legs, less than 2 hours for breasts) so I altered the cook time accordingly. Something else I do is to put a backing dish inside my crockpot to move the food up off the hot bottom. The directions for this dish were great. I used light sour cream along with reduced fat/sodium cream of mushroom soup.

    I was actually making the recipe based on ease and having the ingredients on hand. I was prepared for complaints from the family. We all loved it and I will make it again for sure. The surprising part was how flavorful the chicken was. My substitutes based on availablity were thighs instead of breasts and cream cheese in place of sour cream.

    I followed the directions exactly and it was a very easy recipe to throw together, however, the chicken got dried out and the stuffing wasn't very moist. The flavor was good, but i don't think that I"ll make this one again.

    I made this dish using Cream of Mushroom soup. The next time I will add some water or milk to the soup because the dressing was very dry and use Cream of Celery for more flavor. Easy dish to make. Thanks for the recipe.
