Crock Pot -Chicken Tortilla Soup

A quick, no-fuss version of chicken tortilla soup! All you do is put everything into the slow cooker, and turn it on. Then garnish with baked corn tortilla strips. What a dish.

SERVES 8 -10 (change servings and units)

Ingredients

Directions

    Place chicken, tomatoes, enchilada sauce, onion, green chilies, and garlic into a slow cooker.

    Pour in water and chicken broth.
  3. 3
    Season with cumin, chili powder, salt, pepper, and bay leaf.
  4. 4
    Stir in corn and cilantro.
  5. 5
    Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.

    Garnish with fresh tortilla strips or tortilla chips.

WOW!!!!!! This was AMAZING. I saw the list of ingredients and thought this looked too easy to be as good as all the reviews said. It literally took me about 10 minutes to throw everything into a pot (I didn't have enough time to use a crockpot) and I think shredding the rotisserie chicken took the longest time. I used a little under half a roasted chicken and upped the garlic to about 7 cloves. I let it simmer on the stove for about 2 hours and served it with shredded cheese and sour cream for garnish. YUM! My husband said this one's going into regular rotation Tastes very complex but so easy to make! Thanks for sharing such an awesome recipe!

    This was amazing! I used a rotisserie chicken from the grocery store, probably a little less than a pound but it was plenty. Followed the recipe except only 1/2 an onion (I love the flavor but don't like to eat a lot of them). I'll make this all the time, it was so easy! It was ready early because my crockpot is 6 qt.

    This is an awesome chicken tortilla soup. I use a can of roasted tomatoes which I mashed, red chili sauce in place of enchilada sauce (I prefer that taste) and just eyeballed the amount of chicken, which was probably more than a pound. I didn't prepare my own tortillas, I used broken tortilla chips instead, and it worked great. This recipe went together very quickly and tasted wonderful. It makes a lot so I froze a batch for another day, and kept a batch in the fridge for today's lunch. Thanks Chef Vseward for a super recipe. This will be made often in my home.

    Really good! Used raw chicken, which I shredded 1/2 way through the cooking time. Didn't add the corn and used 1tsp of dried cilantro, but had a yummy meal waiting for us when we got home from a VERY COLD game. Served with sour cream and baked tortilla chips. Thanks!
