Crispy Potato Bites

I thought of this the other week when I was tired of the same old potato dishes. Similar to what my mum used to make. My DH has requested twice since.

SERVES 3 -4 (change servings and units)

Ingredients

Directions

    Preheat oven to 220c.

    Dice potatoes into bite size pieces (approx 1 inch).
  3. 3
    Pour olive oil& melted butter into ovenproof dish.
  4. 4
    Toss diced potatoes in oil& butter.
  5. 5
    Season to taste.
  6. 6
    Sprinkle cheese& breadcrumbs over potatoes.
  7. 7
    Toss mixture til potatoes are covered in cheese& bread crumbs.

    Cook in oven for approx 30 mins (til golden& crispy) turning once half way thru.
  9. 9
    Secrets to success, make sure oven is hot& adding the olive oil stops the butter from burning.

These were pretty good. I'm not a big potato fan so I had to dip mine in ketchup. Hubby thought they were good. I did love the crispy Parm and breadcrumbs by itself. Yum - burnt cheese! I used Panko breadcrumbs.

    Made these to go with burgers for a fry alternative. They were yummy delicious. I did microwave for about 3 minutes as suggested by others before coating with oil. Mine baked a little longer than 30 minutes and came out crispy. I think I can use even a little less oil next time. Will def. make again.

    These were good. Had some potatoes I needed to use, and served this with a quick supper of chicken tenders and a salad. I sprinkled on a little dry ranch dressing mix with the pepper (no salt ). They baked well (425* in U.S.), and made a 9x9 pan's worth. I think I'll cut back on the breadcrumbs a bit if I make again. thanks!

    Super easy, tasty & cheap too. Had with BBQ'd Lamb Loins & Corn-On-The-Cob. Next time I am going to give the diced potatoes a quick zap in the microwave before tossing in the butter, just to speed things up and make them even crispier. Thanks Honni It's keeper.
