Crispy Catfish Fillets

This recipe can also be used for other kinds of fish. It's lowfat, and I got it from Cooking Light Magazine several years ago.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 425°F.
  2. 2
    Combine dressing and egg whites, whisk well.
  3. 3
    Combine cornmeal, parmesan, flour, pepper and salt in shallow dish.
  4. 4
    Pat fish dry, dip in egg mixture and dredge in cornmeal mixture.
  5. 5
    Place fish on a baking sheet coated with cooking spray.
  6. 6
    Bake 8-12 minutes each side until lightly browned and fish flakes easily.
  7. 7
    Serve with lemon wedges.

Great way to fix catfish without frying. Served with Tartar Sauce and Baked Hush Puppies. Even my child who normally turns his nose up at fish ate this. Will make again. Thanks for sharing the recipe!

    Excellent fish recipe! Love the flavor the ranch gives it! And the breading really stays on great. I made a fish sandwhich tonight to make a copy cat fish fillet from mcdonalds, and I think that with this fish it tasted better than mcdonalds! Great recipe! Made for ZWT 3!

    I was looking for this recipe b/c we loved it so much and I am shocked that I forgot to review it and upload the photos! This recipe is FANTASTIC! It is really hard to find a fish recipe that my DH2B will eat and enjoy and this one was perfect! It was so crispy and the crust was so flavorful! I love the fact that it is not fried. It is also a very pretty dish. I will make this again and again. Thanks Diva PotPie!
