Crispy Baked Barbecued Chicken

I love this seasoning mix and sometimes double it to get more crunch. It came from Better Homes & Gardens Cookbook with only two slight adaptations. I usually have to dry slices of bread in my oven & send them through the food processor to crumb, but I usually have all of these ingredients on hand.

SERVES 6 (change servings and units)

    Oven temp 375F degrees.
  2. 2
    Combine bread crumbs, brown sugar, chili powder, garlic powder, dry mustard, and celery seed.

    Season chicken with salt and pepper.
  4. 4
    Brush each chicken piece with melted butter.
  5. 5
    Roll in crumb mixture to coat.
  6. 6
    Arrange chicken, skin side up and so pieces don't touch, in a shallow baking pan.

    Sprinkle with any remaining crumb mixture.
  8. 8
    Bake, uncovered, in a 375 oven about 50 minutes or till tender.

    Do Not Turn!

    Makes 6 servings.

I made this recipe on 8/22/09 as part of mine and SO's dinner.Since there was just us two, only 2 bone-in chicken breasts were used. But I kept the amount of coating mix the same and added a bit more chili powder to " kick " it up some. I baked the chicken at 375° for about 45 minutes. The taste was really very good, but it wasn't crispy enough. It doesn't matter though, it was good enough for me to make again. Thanks for posting and, " Keep Smiling "

    The chicken came out wonderfully moist. I used bone-in chicken breasts and they were perfect after the 50 minutes. Thanks for a tasty recipe.

    This was delicious and moist, even the breasts! I used homemade dry bread crumbs and did everything the same except I added about half a tsp of dry Good Seasons Italian Dressing mix. My husband loved it and so did I. Thanks so much for a great recipe! Will definitly be making this one again.

    this didn't really have a barbecue flavor, but it was delicious none the less. i omitted celery seeds and used breasts, and they came out very moist and very flavorful. we all enjoyed these. Thank you!!
