Crescent Sopaipilla / Sopapilla Cheesecake

These sweeties puff like sopapillas and are great for breakfast or as a change from coffeecake! Cinnamon sugar can be made by combining 1 cup sugar to 2 TBS cinnamon.

SERVES 12 -20 (change servings and units)

    Using a 9 x 13 baking pan, unroll one package of refrigerated crescent rolls and line the bottom of the pan.

    Flatten.
  3. 3
    Mix together the cream cheese, sugar and extract.
  4. 4
    Spread over the crescent rolls.
  5. 5
    Unroll the other can of crescent rolls and place on top of cream cheese mixture.
  6. 6
    Pour one stick of melted butter or margarine over the top and sprinkle with about 1/2 cup of the cinnamon sugar mixture.

    Bake at 350 degrees for 30 minutes.

I have made this many times and it is sooooooo great! It is way easy and taste so good! Company always loves it. Even people that do not like cream cheese or cheese cake.

    Great recipe and so easy! Sometimes instead of putting the cinnamon sugar on top - I put 1/4 c. melted butter and mix chocolate chips, pecans, and coconut and spread over the top. DELISH!

    I used reduced fat crescent rolls and cream cheese. Next time I'll have the butter - I don't think it needs a full stick of butter. This was a spectacular end to my Mexican dinner party! So easy too.

    I made this today for lunch and it was gone in no time. I did make some adjustments. I halved this recipe and baked it in a 8x8 it was done at 25 mins. I also used reducded fat cresecent rolls, fat free cream cheese and splenda. I also added 1tsp of cinnamon to the cheesecake filling. I didn't use the butter on top but instead sprayed with butter flavored pam. With all the adjustments I made it was still delicious. Thanks for the recipe!
