Creamy Turkey Soup (Crock Pot)

Using Turkey Soup #32399 by Leslie Criswell for my inspiration, I created this soup the other night. Very, very yummy!

SERVES 8 (change servings and units)

Ingredients

Directions

    Ingredients in turkey stock, besides the leftover turkey parts, were 1/2 Vidalia onion chopped, stalk of celery chopped and 1/4 cup chopped fresh parsley.

    Combine all soup ingredients, except milk, cream and flour, in crock pot.

    Use just enough chicken broth to barely cover meat and veggies.
  4. 4
    Cook on low for 8 hours, or until potatoes and carrots are easily pierced.

    Combine milk, cream and flour and add to soup.
  6. 6
    Let cook for approximately 30 minutes more, stirring occasionally to thicken.

    You can also add any leftover gravy you have.

This was very good, but a little bland for us. Next time I will add some pepper and/or paprika to spice it up. A great way to use up leftover turkey, though!

    Very good soup. I added some salt and some Bell's poultry seasoning to add some more flavor. I didn't have cream, so I substituted Evaporated Milk. The final step of adding the milk, cream and flour is key to this recipe. It makes the soup rich and smooth tasting, but not heavy. My children loved the soup. It is a great way to use leftover turkey.

    Very tasty and easy. If you cook it too long the thickness can be overbearing but soo good. You only need tow scoops per bowl and serve w/ garlic bread.
