A lovely change from the usual tomato sauce. It's even better when topped off with nicely browned fresh mushrooms!

2 1/2 cups (change servings and units)

Ingredients

Directions

  1. 1
Saute garlic in butter over very low heat for 2 minutes.
  2. 2
Add wine, bring to a boil, add spinach and reduce heat to low.
  3. 3
Add cream cheese and stir until melted.
  4. 4
Add milk, increase heat to medium high and stir until sauce is smooth and heated through.
  5. 5
Remove from heat, add Parmesan and stir until cheese melts.
  6. 6
    Serve over hot, drained pasta.

Kind of bland...after it was done I tasted it and panicked because there was no flavor! I quickly added more parmasan, nutmeg, lemon juice, cayenne, and a lot of salt and pepper. Then it tasted great! Almost like a less rich spinach dip.

Spinach lover's paradise; a big hit with my family. Since I only had a 32oz bag of spinach I decided to just go ahead and triple everything. I was a bit worried about it being too thin, but once I stirred in the cheese everything came together beautifully. I'll make this many more times for sure.

Amazing Recipe! I didn't have any spinach, but the recipe still tasted great. This is going to be one I make again. Very excellent with mushrooms, and very easy to make!
