Creamy Pea & Potato Salad

Have not tried this yet, but wanted to add it to my summer salad list.

SERVES 6 (change servings and units)

Ingredients

Directions

    Bring potatoes in salted water to a boil.
  2. 2
    Reduce heat; simmer till tender (about 20 to 25 minutes).
  3. 3
    Two minutes before potatoes are done, add peas.
  4. 4
    Drain off water; cool to room temperature.
  5. 5
    Cut potatoes in wedges.
  6. 6
    In large bowl, combine mayonnaise, mustard, vinegar, tarragon and salt.
  7. 7
    Stir in potatoes, peas and chopped onion until coated.
  8. 8
    Chill for 1 hour or until ready to serve.

This was really good... I did have to use Russet potatoes, and I accidentally steamed them way too long cause I got distracted, so this was soft and squishy creamy pea & potato salad! Still very tasty and I'll definitely make this again when we're grillin'. The Dijon gives just the right amount of zing to this dish, and the peas keep it mellowed out and fresh tasting. I did use from scratch mayo, and I had to sub onion powder for red, since I had no fresh in the house. I'll try it again with the fresh onion. Thanks for sharing.

    Yummy salad. The addition of the peas is very nice, I love the little pop when you bite them. I didn't have any tarragon so used a bit of marjoram successfully. Easy to make and to enjoy. Made for PAC, fall '09.

    A very nice adaptation of the old favorite potato salad. Just tangy enough and the peas give a slight sweet taste. We all loved it and it's very simple to mix together. Thanks, Carole in Orlando
