Creamy Matchstick Carrots

A really yummy and creamy side dish.

SERVES 4 (change servings and units)

Ingredients

Directions

    Top and tail the carrots wash, scrape and dry. Cut the carrots into matchstick strips.
  2. 2
    Heat the butter in a deep pan over a medium heat. Add the finely chopped onion and cook until a golden colour. Add the carrots and stir well.

    Dissolve the stock cube in 125ml hot water, add to the pan with the bay leaf.
  4. 4
    Reduce the heat and simmer until the carrots are tender, stirring frequently.
  5. 5
    Season with salt and pepper, remove bay leaf and stir in the cream just before serving.

    Garnish with extra bay leafs if desired.
  7. 7
    For Vegetarian use Vegetable broth.

I scaled this back to 1 serve and as a side served 3 of us (o'kay could have done with a little more) with Nif Nif's Great Grilled Potatoes and some steamed bean (in the microwave but I boobed and they were a disaster and binned) and the main was Oven Roasted Chicken With Lemon, Garlic and Rosemary and they all compliments one another.     These carrots are FANTASTIC! My family normally complains when I make any type of cooked carrots, but not this time. I heard "Oh Wow! Mom these carrots are so good, you have to make them again." from three very picky eaters. I will definitely make them again. Thanks for sharing Tisme. Made as a recipenap for the 24th AUS/NZ Swap.

    Very easy to make using my juilienne peeler which meant I didn't have to cook as long as the recipe states and I only had to use 1 carrot but left other ingredients as stated. I will make these often. It complimented Sharon 123's Garlic Ginger Chicken Strips (I left breasts whole) beautifully. I served with steamed green beans & peas and Jewelies Smashed potatoes with garlic pepper as the seasoning. Thanks for a great 'keeper'.
