Creamy Lemon Parfait

this is a lovely summer dessert from fine cooking.

SERVES 4 (change servings and units)

Ingredients

    combine cream cheese sugar and salt in a bowl.
  2. 2
    beat with an electric mixer until smooth.
  3. 3
    add heavy cream and beat on low speed, scraping down the sides of the bowl as needed.
  4. 4
    increase the speed to medium and beat until soft peaks form.
  5. 5
    add lemon juice and zest and stir to blend.
  6. 6
    in 4 wine glasses or parfait bowls layer bottoms with berries, top with cream, layer with more berries.

    top each glass with a dollop of cream and garnish with mint.

This is so cool and creamy. A perfect summer dessert. I used strawberries and bananas this time. I plan on using blueberries and strawberries for a 4th of July treat. Delicious!

    Light, Cool, Creamy, Cheesey,& Refreshing. I used 8 ounces of cream cheese. Used blueberries and raspberries. The zest & juice from the whole lemon.
