Creamy Feta Salad Dressing and Dip

This makes a creamy, rich salad dressing that is also great as a dip. I found it at the Treasure Cave Cheese website.

1 1/2 cups (change servings and units)

Ingredients

    With a fork, mash the cheese and buttermilk together until it resembled the consistency of cottage cheese.

    Add the remaining ingredients and blend well.
  3. 3
    Add salt and pepper to taste.
  4. 4
    Let sit, covered, in the refrigerator at least a few hours to blend flavors.

    If it's too thick, just add a little milk until it's the texture you desire.

    This is sooo good on a salad with fresh greens, tomatoes, cucumbers, slices of red onions, and kalamata or ripe olives.

I was trying to get a thick consistency for dip so I didn't use the milk. I really liked the flavor, the only thing I would change is to reduce the vinegar because it was quite tangy. It was a hit at my daughters' birthday party, served with veggies.

    This was better than a 5 star recipe! We loved it. I made it intending to use it for a dressing, so I pulsed the cheese in my blender, added the milk, then the sour cream and mayo, lastly the garlic, onion and herbs. I went easy on the salt as I thought the mayo and feta would provide enough (it was perfect for us), and I added another 1/4 cup of buttermilk dressing to get a pouring consistency. This is getting better the longer it stands.

    Very good. My husband loved it. I thinned the dressing and used it over greens and my husband used it as a dip. For visitors I would make up little salad plates with assorted greens and drizzle the dressing.
