Creamy Cucumbers

Cucumbers in sour cream. A wonderful summer side dish, cool and refreshing.

SERVES 4 (change servings and units)

Ingredients

Directions

    Peel cucumbers and slice in half lengthwise.
  2. 2
    With a small spoon, scrape out seeds and slice cucumbers about 1/4 inch thick slices.
  3. 3
    In a storage bowl with a lid, combine the sour cream, vinegar, sugar, chives and salt and pepper.

    Mix until well blended.
  5. 5
    Add cucumbers, replace lid, and shake bowl to mix.

    Store in refrigerator until ready to serve, at least 15 minutes.

    Serve cold.

I had cucumbers from my garden, so I went in search of a creamy recipe, using them. Yours was unique, in that it didn't require covering them in salt, first, to get the moisture out. Since I was in a hurry, I tried your recipe. I really liked it, although I did add snipped dill, as well, since I had it growing in my Aerogarden, along with the chives, and most other recipes called for it, too. It was light and yummy; although, since the cucumbers were not devoid of moisture, it became pretty soupy, quickly. I would recommend this recipe be made and eaten, within a couple of hours. Yum; thanks!

    I had two cucumbers I needed to use up so made this as a side dish tonight. I followed the recipe exactly as written other then I used Splenda instead of sugar as that is all I buy. This was good but even after letting it sit for six hours I thought it could have used more flavor.

    My wife and I enjoyed making this dish, and enjoyed eating them even more! We added plenty of pepper and also added dried dillweed to the final mixture, and it came out wonderful! It was a cool, refreshing side dish to our potluck Memorial Day barbecue. Thanks for posting!
