Creamy Burrito Casserole

Satisfy your craving for something different tonight. It's good and fairly easy. This is stuff I usually have on hand too.

SERVES 8 -10 (change servings and units)

Ingredients

  • 1 lb ground beef or ground turkey
  • 1/2 medium yellow onion, chopped

  • 1 (1 1/4 ounce) package taco seasoning
  • 6 large flour tortillas

  • 1 (16 ounce) can refried beans
  • 2-3 cups shredded taco cheese or cheddar cheese

  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 4 ounces sour cream
  • jarred hot sauce, if desired to spice it up

Directions

  1. 1
    Brown ground meat/turkey and onion; drain.
  2. 2
    Add taco seasoning and stir in refried beans.
  3. 3
    Mix soup and sour cream in a separate bowl.
  4. 4
    Spread 1/2 sour cream mixture in the bottom of a casserole dish.

    Tear up 3 tortillas and spread over sour cream mixture.
  6. 6
    Put 1/2 the meat bean mixture over that.
  7. 7
    Add a layer of cheese.
  8. 8
    You could put some hot sauce on this now.
  9. 9
    Repeat the layers.

    Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

My family LOVED this recipe! I added 1/2 can of Rotel tomatoes to the meat mixture in half of the casserole because my kids are not big fans of spicy foods I otherwise followed the recipe. Deeeeeelish!

    Delicious! My fiance' and I both loved this. I used only 5 tortillas, because mine were pretty big, and I think the casserole might have been too dry if I used all 6. Seriously though this was easy and great. My fiance' actually ate half of the entire recipe, and I had to stop myself from eating the other half!

    This was as good as I expected it to be given all the wonderful reviews. I did make some substitutions even though I usually like to make a recipe as written the first time. I used one of Campbell's new Mexican style cream soups in place of the cream of mushroom (I think it was the pepper jack variety I used) and I added a can of Rotel tomatoes to the meat/bean mixture. Otherwise, I followed the recipe exactly. I didn't add hot sauce because the soup and tomatoes provided enough for our tastes. Thanks for a very easy recipe that I'll definitely make again!

    This casserole is great! It was easy to put together and used ingredients we had in the house. All four of us had second helpings, with leftovers for lunch. I did use low-fat versions of the refried beans, shredded cheese, soup, and sour cream to cut down on the fat, and next time I make it I will probably add a green pepper (chopped). Thanks for this recipe. It is definitely a keeper.
