Creamy Brown Rice Pudding

From the Famous Brand Name Recipes cookbook 'WHOLE-GRAIN COOKING,' this recipe is a nice change from the puddings made with white rice! [NOTE: If you use any butter when cooking the rice, DO NOT add another tablespoon of it as per this recipe.]

SERVES 4 (change servings and units)

    In medium saucepan, combine rice, milk, syrup [& raisins, if including them], & bring to boil.
  2. 2
    Reduce heat & simmer 20 minutes, stirring frequently.
  3. 3
    Remove from heat & stir in butter & cinnamon.

    If desired, garnish with additional cinnamon.

This is delicious! I made it with honey, and I used skim milk. The skim milk worked fine, but it took more stirring. Next time I will try it with maple syrup. The honey makes it a little too sweet. A keeper, for sure!

    I've made this twice, using maple syrup and honey. The honey is sweeter than the maple syrup and next time I will decrease. I have to because when you eat all four servings at once, the calories add up! This got creamy even with 1 percent milk and I used part of a cinnamon stick to flavor. Thanks Sydney Mike, for posting. This is a fabulous way to include whole grains in one's diet! Roxygirl

    This is an awesome recipe!! I am very weight conscious, so I tweaked it a bit. Don't let that deter you, though-I am VERY picky when it comes to food's textures and tastes. I used 1% milk. I also used sugar free pancake syrup and four packets of Splenda instead of the honey. I even omitted the butter completely. I added mixed dried fruit and it was a yummy, cozy, first day of Autumn recipe..Thank you so much!!!
