Creamed Spinach and Tortellini Casserole

A rich and creamy casserole that is quick and easy to put together and to complete the meal add garlic breadsticks and a caesar salad. The original recipe source was Meals.com, however I have modified it to suit our tastes with great results.

SERVES 4 -6 (change servings and units)

    Preheat oven to 350 degrees.

    Grease a large casserole dish.
  3. 3
    Combine pasta, creamed spinach, cheese, mushrooms, garlic and black pepper in a large bowl.
  4. 4
    Transfer mixture into prepared casserole.
  5. 5
    Top with reserved tomatoes, sliced and sprinkle with parmesan cheese.

    Bake for 20 to 25 minutes or until bubbly and cheese is golden brown.

    (I like to brown slightly under the broiler).

I made the creamed spinach myself as I can't find the pre-made in our local store, but this was delicious! I didn't think my picky kids would eat it but my teenage son ate half the pan himself! I forgot the tomaotoes the second time I made it, but it was still good!

    I can't give enough stars for this recipe. It was outstanding. I added 2 extra cloves of garlic and I mixed in the parmesan cheese and then sprinkled some extra on the top. Aside from that, I followed the recipe exactly, and it was a perfect 5 stars!

    This was something the whole family enjoyed! I made a few changes. I did not add the extra cheese, topped with toasted bread crumbs, and on half of the dish added chopped hot cherry peppers (for my husband and me). I broiled for a few minutes.I'm going to have to keep the creamed spinach on hand, since this recipe is a keeper! Roxygirl
