This is my grandmother's recipe that she handed down, it is so good!!!! I love corn in anything, and this has been a favorite, it's real comfort food. This is very moist and keeps, and reheats well.

Directions

  1. 1
Mix all ingredients in a buttered 8" square baking pan (glass pans work best).
  2. 2
Stir until all ingredients are mixed well.

Yummy! I usually use this recipe to make a sweet corn pudding by adding 2 tablespoons of brown sugar, 1/4 teaspoon of nutmeg and 1/2 teaspoon of vanilla. But next time I will try adding cheese instead, as some others have suggested. A keeper!

I love this stuff! It's so easy and affordable, too. I've also made it with plain lowfat yogurt instead of the sour cream (I don't always have sour cream on hand) and it turns out just as well.

I make this dish often. My grandmother's recipe also had 1 cup grated swiss cheese. Mix 1/2 cup in the recipe and bake and then in last 10 minutes of baking, top with remaining cheese and bake until bubbly & melted. This is great served with any pork dish and good for potlucks and family get togethers.

I really lked this. I fixed it and shared it with my neighbors and they raved about the taste as well. The Jiffy Mix really gives the corn a new texture and taste which we all loved. We had this with venison chops and it was a great match up. We'll definitely make this when we have venison again. Thanks for sharing this.
