Creamed Chipped Beef on Toast

This is a breakfast that is most often served in Amish homes according to my mother. But my dad called s.o.s and said he had it in the army.

SERVES 4 -6 (change servings and units)

Ingredients

    Cut the beef and onions very fine.
  2. 2
    Melt the butter or margarine in a large skillet. First add onions for 1-2 minutes then add beef.
  3. 3
    Sprinkle the flour over the mixture and stir well to cook the flour and melted butter,be sure it doesn't stick or burn-stir constantly.

    Gradually add the milk, continue stirring until the mixture boils, then turn the fire down and cook slowly.

    It should thicken enough to be a good gravy consistency.

    Serve over toast.

    Some people serve it on the toast with chopped hard boiled eggs.

    I am sorry there is no stove temperature.

I've been making this for years; although, I don't use the onions and simply tear the chipped beef into pieces. In my area it is also served on biscuits or salt rising bread. I've never found anyone who didn't like chipped beef with gravy. Thanks for sharing.

    This was very good. My husband has always liked this but I'd never had it or cooked it. Next time I will definitely rinse/soak the meat because it was very salty without doing that — but that's not a fault of the recipe so I didn't let that affect the rating. Despite the saltiness, this was a big hit with my husband who went back for seconds. That's the true measure of how many stars a recipe should receive. Thanks!

    DH would probably eat this 7 days a week! He said this is the best recipe of all. I liked the easy preparation. I started it off on med. hi, put the heat up to boil the gravy for a minute, and then simmered it for a couple minutes. It was smooth and very tasty!

    This is simple comfort food for cold evenings following busy days. My husband also likes the version using browned ground beef instead of the dried beef. I always rinse (and sometimes soak) the jarred beef before using to reduce sodium content.
