Chicken With Tarragon, Garlic & Olives

Mmmm! This was a lot like a simple salmon chowder, which was exactly what I was looking for! The seasoning allowed the salmon to really shine through. It makes a fair bit, though. I scaled it down for four (there's three of us, but we have hearty appetites), but even with second helpings for DH and me, we didn't come close to finishing it. I don't think it would reheat well, either. So next time I'll scale it back even further. I couldn't get fresh dill at the store, so I used dried--I think fresh would be much better. I have to say, though, that neither DH nor DS cared for it much. I've no idea why...salmon and cream: what's not to like??! But I just loved it, and while I wouldn't make it often due to the richness, I'm sure I'll make it again. Thanks so much for posting, Pot Scrubber! Made for Think Pink 2008.

Very simple... Move over Cambell's Cream of Crap... there is a new kid in town, and that ain't crap!!!! I followed the recipe exactly as instructed. I had to resist the urge to add a variety of seasonings, but believe me no additional herbs and/or spices are required. When the intitial ingredients were added to the water, my immediate reaction was to add more water; there appeared to be an over-abundance of ingredients for the 4 cups of water. However, the recipe stipulated 4 cups of water; so, disloyal to nature, I obeyed the instructions. During the cooking process, I stirred the pot a few times and it began to resemble a chowder rather than soup. Prior to the addition of whipping cream, (I love cooking with whipping cream, it is so naughty.) I did add a further cup of water, to create soup....it was pretty thick without the additional water.... I changed nothing else... I did add optional dill, because I love dill, and buy it by the ton... The dill added a European flavour, reminiscent of cooking flavours at home when I was a child.... much appreciated, thank you, Pot Scrubber. . However, I experimented with flavours after the soup was finished. To one bowl I added a TSP of lemon juice... Y-U-M-M-Y.... To another bowl I added a sprinkle of Old Bay Seasoning..... Y-U-M-M-Y again... To a third bowl I added a splash of Balsamic Vinegar... Equally tasty. I rather think I will play with additional flavours. It is a personal preference, and can be done after the soup is finished. It is a wonderful soup, in any person's language; thank you Pot Scrubber for including this recipe.

Such a simple soup with minimal seasonings which allows the flavour of the salmon to shine! Since I prefer a thicker soup, I didn't add any water; in fact, I'll puree the veggies with my hand blender next time. I wish I could throw caution to the wind & use whipping cream but my dietary concerns leaned towards low fat milk - I compromised by using half & half! Since I was out of dill, I selected lemon thyme from my garden as a garnish. Thanx Pot Scrubber!
