Cream of Cilantro Soup

SERVES 4 -6 (change servings and units)

    In a food processor puree the cilantro with 1 cup of the broth, and blend to smooth.

    In a large saucepan melt the butter over medium heat and whisk in the flour.
  3. 3
    Slowly add the remaining broth, whisking to smooth.
  4. 4
    Boil, while whisking, for 1 minute.
  5. 5
    Stir in the cream cheese, cilantro mixture, sour cream, garlic, salt, pepper, cumin.

    Reduce heat and simmer for 15 minutes.
  7. 7
    Ladle into bowls and offer garnishes at the table.

    Awesome! Ok, so I changed it a bunch - I only had half a package of cream cheese, and I added a head of cauliflower. It turned out delicious, though, and I will put this in my keeper file!

    If you like cilantro, this soup is for you. It is very similar to a top rated recipe from Southern Living magazine so I thought I would try it. This soup is really good, my whole family loved it and it was easy to make. This recipe is a keeper!!! The only thing I would change is I would grind the cilantro - with the garlic - in the blender instead of the food processor to make it a little more smooth.

    This soup was simply wonderful for taste and simplicity! My boyfriend said this is one of the best soups he has ever had. I did add three extra cloves of garlic and increased the cumin to 1 teaspoon as these are two flavours we love and they complimented the cilantro well. It will definitely become a winter favourite in our house.
