Cranberry Oatmeal Muffins

These are moist, tasty muffins which are especially nice to serve around Christmastime.

12 muffins (change servings and units)

Ingredients

Directions

    Preheat oven to 400 degrees F.

    Soak oats in yogurt or sourcream just enough to make it moist.
  3. 3
    Sift dry ingredients into a bowl.
  4. 4
    In a separate bowl, add oil, sugars, and egg.
  5. 5
    Beat until well blended.
  6. 6
    Gradually fold in dry ingredients.
  7. 7
    Add chopped cranberries.
  8. 8
    Put in greased muffin tins.

    Bake for 20 minutes.

We really like these- thanks for posting! I increased the sugar by 1/8 c. and added a little vanilla- delicious.

    My 7-year old son and I made these muffins as part of breakfast this morning. We were low on yogurt so we cut the recipe in half but it still made a generous 1 1/2 dozen mini muffins. Everyone loved it although I agree this is one recipe where a little more sugar might be called for since I think the yogurt gives the recipe some added tartness I think next time I might try substituting applesauce for the oil would also would add some natural sweetness. We added a bit of lemon zest (out of oranges). Like others our mini muffins cooked up quick in about 12 minutes. Thanks for sharing the recipe - it was the perfect Fall breakfast treat!

    These are very tasty. A great recipe! I added 1/2 cup chopped walnuts & an additional 1/4 cup of sugar as we prefer our muffins a little sweeter. I made them in mimi muffin tins for the kids which I baked for 12 minutes.

    Boy did the house smell good when I made these! I added about a half cup of walnuts, otherwise followed the recipe exactly. Another beautiful way to get oatmeal into my DH! Just delicious!
