Cracker Barrel Baby Carrots

This recipe came from CopyKat. It's easy to make and is a nice side dish with almost any entree. Another plus is it's a real kid pleaser!

SERVES 4 -6 (change servings and units)

Ingredients

  • 2 lbs fresh baby carrots
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons butter

Directions

  1. 1
    Rinse carrots and put in a sauce pan, pouring enough water in pan to just cover the top of the carrots.
  2. 2
    Cover carrots and bring to a boil over medium heat.
  3. 3
    Turn heat to low and simmer about 30 minutes til tender when pierced with a fork.
  4. 4
    When carrots are tender pour off half to three fourths of the water.
  5. 5
    Stir in the rest of the ingredients.

This is an okay recipe. Nothing really wrong with it. But, by leaving some water in the pan, it dilutes the flavour of the butter, salt & sugar.

    Nice side dish. I have never had Cracker Barrel carrots so not sure if they are similar or not. I followed the recipe as written other then I didn't add the salt. I also used Splenda instead of sugar as that is all I buy. I did change the method of cooking these. I melted the butter in the microwave and mixed the sugar in it. I put the carrots in a pan and poured the butter/sugar mixture on top. I grilled them for about 30 minutes. Yummy!

    I too used to waitress at Cracker Barrel for several years, and I happen to know that they use brown sugar instead of plain sugar. Makes it a little sweeter.

    since there are only 2 of us . i cut the recipe in half.since my carrots weren't really that sweet to start,i ended adding about another 1/2 teaspoon of sugar.with that addition this recipe really does taste like Cracker Barrel carrots.this will be made again.thank you for posting.
