A tasty appetizer from Paula Deen of Food Network. These are a great make-ahead that freeze well.

SERVES 8 (change servings and units)

Ingredients

Directions

    Preheat oven to 425°F.
  2. 2
    In large bowl, combine all ingredients except bread and parsley.
  3. 3
    Spread mixture over bread rounds.
  4. 4
    Score each round into quarters and place on parchment-covered or greased baking sheet.
  5. 5
    Bake until topping is heated through and golden brown, about 10-15 minutes.

    Sprinkle with chopped fresh parsley and serve hot.

I give this 5 stars if made and eaten "fresh", only 3 stars if frozen. I made these in advance for a weekend with friends. They were delicious right out of the oven, but once they had been frozen and then reheated they just weren't the same. I will definitely make again, but will not freeze.

    These were really good, after I added salt! I went right by the recipe, and baked a few immediately. I didn't really care for them until I figured out they needed some salt. Then they were fine. I froze the rest of them for later. I took them out of the freezer, put them on a pan, added a little salt, and broiled them while frozen. They turned out great. The bottom of the English muffin didn't get as hard as it did when I baked them right after assembling. This is a great make ahead recipe.

    These turned out wonderful. We really enjoyed them. I sliced and toasted up a baquette bread....will make again for sure

    These were a hit! Absolutely delicious. I used canned crab meat and I addded more than a dash of cajun red spices on the second round. What was so great about these appetizers is that they are better hot, but they are still yummy at room temp. The plate was empty by the time dinner was served.
