Country Cornbread Stuffing

My mom has been making this for many years and would have a very unhappy family if she didn't make this at Thanksgiving. It's very easy to throw together and so good! The ingredients listed as optional are listed like that because I never use them and my stuffing turns out just fine! I hope you and your family will enjoy it as much as mine!

SERVES 18 -20 (change servings and units)

Ingredients

  • 2 (8 1/2 ounce) boxes Jiffy cornbread mix, baked and crumbled

  • 4 cups soft breadcrumbs
  • 1 lb sausage
  • 1/2 teaspoon sage
  • 2 cups celery, slices (optional)
  • 1 cup chopped onion (optional)
  • 2 eggs, beaten

  • 1 (10 ounce) can chicken broth
  • 1/4 cup water (or more to moisten as much as you prefer)

Directions

  1. 1
    Fry sausage and add sage, celery, and onion.
  2. 2
    Add breads, eggs, chicken broth and 1/4 water (or more) and bake at 350F in a 9x13 pan for 35 minutes.

I had never had cornbread stuffing before making this, and I was blown away by how great it was!! I used the recipe for "Sweet Cornbread" #83625 and it was perfect! A must have for Thanksgiving from now on! Loved it!!!

    I didn't use the sausage, so maybe that is why the mixture was pretty dry before putting it in the oven. I added chicken broth to moisten it a bit. After removing it from the oven, it was still dry and so I added more broth, maybe a half cup. This stuffing is EXCELLENT. Just add broth to your liking. I loved the sage in it -it's so simple but was the best I've ever had.

    Great recipe for cornbread stuffing. I did not add sausage, and it still came out great.

    This is fantastic! I followed the recipe exactly except I used chopped turkey sausage. I tried it and said "Oh my god," and then my mom tried it and she said "Oh my god!" It's perfect!
