Found on the net and posted so that it will be easier to find when folks ask for the recipe! Prep times are guess-timates.

SERVES 24 (change servings and units)

Ingredients

  • 1 (18 ounce) box cake mix, package (Duncan Hines is the best)

  • 2 tablespoons flour
  • 3 eggs
  • 2/3 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon baking powder

Directions

  1. 1
    Mix all ingredients together.
  2. 2
    Spoon into prepared muffin cups.
  3. 3
    Bake at 375 for approximately 20 minutes or until tops are lightly browned.

    For ALMOND POPPYSEED MUFFINS: use a white cake mix, add 2 teaspoons poppyseeds, and 1 tsp almond extract.

    FOR CHOCOLATE MUFFINS: use a chocolate cake mix and stir in 1 1/2 cup chocolate chips.

    Create your own: use whatever flavor cake mix you want and add your own goodies.

    Other suggestions:.

    + French vanilla cake mix and fresh raspberries.

    + Lemon cake mix and poppyseed.

    + Spice cake mix with cinnamon/sugar topping.

These were okay. I made the almond poppyseed muffins. I have never had Costco Muffins so I can't compare, but I thought they were a bit dry...they didn't have the moist consistency I expected using a cake mix. They definately took on the cupcake flavor...which to my family made them not the greatest muffin, but also not the greatest cupcake either. (My DH insisted that I frost them after eating two...and that didn't end up being an improvement.) Ha-ha!

    Very good muffins and very much like Costco's product! I added blueberries to a Duncan Hines lemon cake mix and topped with the streusel mix from Old Fashioned Banana Muffins by Gerry999. Using the muffin tins available to me, I made 12 regular & 6 large muffins. Thanx for posting!

    Okay, I am re-rating this recipe, after trying a different variation. I was very disappointed when I tried the chocolate muffins, but I gave it another try with Almond Poppyseed and omgosh were they ever good!! I used a Pillsbury white cake mix, 1 tsp almond extract and 2 tsp poppyseeds. The only change I will make to the recipe the next time is increase the almond extract to 1 1/2 tsp and poppyseeds to 3 tsps. I don't think I will try the chocolate muffins again, but will make the almond poppyseed ones ALOT! Sorry about the bad review earlier because of the chocolate variation. Thanks for posting this recipe.

    Great!! My family loves costco muffins and i have been looking forever for a recipe! I made double chocolate chip muffins, but for the cake mix i used Moist Deluxe Dark Chocolate Cake Mix(Copycat-Duncan Hines) Moist Deluxe Dark Chocolate Cake Mix(Copycat-Duncan Hines) and it turned out great! Thanks so much for the recipe!
