Directions

  1. 1
For the tilapia marinade, combine lime juice, 1 tablespoon olive oil, 2 tablespoons cilantro, 1 teaspoon garlic, 1/2 teaspoon salt, and sugar in a shallow dish.
  2. 2
Add tilapia and marinate 15 minutes, turning once.
  3. 3
To prepare the bean and rice mixture, cook the rice according to package and keep warm while the tilapia is marinating.
  4. 4
Preheat oven to 400 degrees. In a large, skillet or saucepan, heat 2 tablespoons olive oil on medium heat. Add remaining garlic and onions; sauté until translucent, about 5 minutes, stirring. Add 2 tablespoons
  5. 5
cilantro, oranges, tomatoes, beans, oregano, 1 teaspoon salt, pepper, and cayenne.
  6. 6
Cook, uncovered, until hot, 7 to 8 minutes, stirring occasionally.
  7. 7
Transfer hot rice to a 9 by 13 inch baking dish. Spoon the bean mixture on top of rice and gently blend. Slightly overlap tilapia fillets on top and scrape marinade over fillets.
  8. 8
    Bake 16 to 20 minutes.

YUM YUM YUM!!! This dish is so delicious and pretty easy to prepare too. I used canned mandarin oranges but besides that didn't make any changes. Thanks so much for this awesome recipe!!!

We eat a lot of tilapia and I am always looking for different ways to prepare it. This was delicious. I only cooked 3 fillets for the two of us but kept the marinade to the same amounts. I used 1/2 cup of rice and a large can of mandarin oranges because I didn't have any oranges. I also used only a 14 ounce can of diced tomatoes. We just finished the leftover rice for lunch! YUM!

I've made this three times now and it has been a hit with everyone from my mother (who doesn't care for fish) to my boyfriend (a fabulous New Orleans chef). It is easy to make and so delicious! I haven't changed anything although I eyeball ingredients and probably use a bit more cayenne than called for. I use black beans and I think that using cilantro (over parsley) is a must! Thank you for posting this recipe!
