Corned Beef in Beer (Crock Pot)

Recipe #70522 | ½ day | 10 min prep | add private note

By: papergoddess
Sep 4, 2003

The best Corned Beef I've ever made was in the Crock pot. (You can substitute water for beer, but the flavor won't be the same) NOTE: If you make more than 3-4 lbs., cook it on HIGH. I've made 6-7 lbs., and it won't be done after 9 hours on LOW. ANOTHER NOTE: This makes wonderful sandwiches if you cook it, then chill it before slicing.

SERVES 6 (change servings and units)

Ingredients

Directions

  1. 1
Place potatoes, onions, carrots, and bay leaf in crock pot.
  2. 2
Trim excess fat from brisket; put meat on top of veges.
  3. 3
If desired, place cabbage wedges on top of meat.
  4. 4
    Pour beer over all.
  5. 5
Cover and cook on LOW heat setting 9-11 hours.
  6. 6
Slice brisket thinly across grain (let it cool 5- 10 minutes for easier slicing).
  7. 7
    Serve with vegetables.

I actually didnt like the way this turned out as well as boiling the corned beef with seasonings and then adding the cabbage towards the end. I'll stick to the original way Ive done corned beef and cabbage.

Sensational. Short prep...wonderful flavor. Especially the vegtables that take on the full flavor of the corned beef and seasonings vs just "boiled vegtables". This one is a keeper.

This is a wonderful way to make corned beef! I just wanted the roast to make sandwiches with so the only veg I used was the onion. I added 1 large bay leaf and the whole spice packet. Heineken was the beer of choice. Did my house smell incredible while this was cooking. The corn beef roast turned out moist and VERY flavorful. We thoroughly enjoyed it!

Very good. My husband and I had a dinner guest, and we all loved this recipe. Only thing was that I was unsure if I should use the spice packet that comes with the corned beef. I used half of it. Everything turned out great!
