For fans of corned beef and sauerkraut, this makes for some good eating.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    Combine the sour cream, sauerkraut, onion (if using) and garlic.
  2. 2
    Spread mixture onto bottom of 9x13-inch pan.
  3. 3
    Scatter corned beef evenly over mixture.
  4. 4
    Spread cheese on top of corned beef.
  5. 5
    Put bread on top of the Swiss cheese.
  6. 6
    Pour butter on top of bread.
  7. 7
    Bake at 350°F for 1/2 hour.

This was a great recipe. it was eating a reuben sandwich. I'll use this recipe a lot and it so easy to fix

    OK, aside from the fact that I gained ten pounds eating this, and it will probably contribute mightily towards an impending coronary, it was fantastic. But hey, it's St. Pat's day and I had to get my corned beef fix. I did use the onion, and I also used Thousand Island dressing (in small amounts) to top it. My kids unfortunately decided they definitely do not like corned beef however. That's unfortunate because they will probably get it every St. Patrick's Day (at least) until they move out. It was a very easy recipe to put together and tasted fantastic. At least to the adult part of our household.

    Awesome! I loved this recipe! The only corned beef I found was a brisket and I made it the night before. I used a half of a small onion and increased the sauerkraut, sour cream and garlic, just because we tend to like our dishes more 'wet' than 'dry'. It was a huge hit. My parents were visiting and they suggested pouring a little Thousand Island dressing (upon serving) and it tasted just like a Reuben Sandwich! I will definitely make this dish again!

    This is some goooood stuff! I halved the recipe, using leftover corned beef brisket......I still had plenty for 4-6 servings. I loved how the bread cubes got crispy and buttery. My bread was wheat, so I added caraway seeds to the topping and you'd swear it was rye bread. I did use the optional onion, and recommend using it. I agree with the poster that if you like sauerkraut and corned beef, you must try this! I will make this again, possibly for an upcoming potluck. Thanx!
