SERVES 8 -9 (change servings and units)

Ingredients

Directions

    Sift together flour, cornmeal, sugar, baking powder and salt.
  2. 2
    Add eggs, milk and oil or melted shortening. Beat until just smooth-do not overbeat.
  3. 3
    Turn into a greased 9x9x2 inch baking pan. Bake in a 425: oven for 20-25 minutes.
  4. 4
    Can add drained corn, bacon, finely chopped jalapeno peppers etc. for a different taste.

Fantastic! I doubled the recipe, and used a 9" x 13" pan. This was a great success, and flew out of the pan! A keeper ~ THANKS!

    Great! I added in a cup or so of canned corn, which added to the sweetness and texture.

    This was terrific! I had the most excruciating craving for cornbread last week and whipped this up. Easy and simple good cornbread taste. I didn't find it to be dry in the least, as some other reviewers did. I thought it had a nice fine crumb if not overmixed....Will make this again to eat with my vegetarian chili. Thanks for posting!

    Great recipe! I think that the amount of baking powder in this recipe really makes a difference! I used No Salt Added canned corn with mine, and it was great!
