    Preheat oven to 400°F.
  2. 2
    Cream together butter, sugar, honey, eggs, and salt in a large bowl.
  3. 3
    Add flour, cornmeal and baking powder and blend thoroughly. Add milk while mixing.
  4. 4
    Add corn to mixture and combine by hand until corn is worked inches.
  5. 5
    Grease a 12-cup muffin pan and fill each cup with batter.
  6. 6
    Bake for 20-25 minutes.

This is a fantastic recipe that comes close to our beloved Kenny Rogers! I stupidly used course cornmeal instead of fine cornmeal. BIG MISTAKE. Also, i think 1 tsp of vanilla extract will heighten this recipe to perfection. Thanks for sharing.

    These muffins comes pretty close to the KR muffins I adore. I once made 2 or 3 batches for a church function. Needless to say, all gone. I prefer not to use frozen corn and reduce the sugar by a tbs. Yum!

    These were great. I doubled the recipe and used 1 cup of honey and no sugar. I used the smart balance 50/50 for the butter. I also used a whole 16oz bag of frozen corn. We really loved them. Thank you !

    Really good muffins! I can't compare them b/c I've never been to Kenny Rogers Roasters. But, I can say I've had many a corn muffin. These are now my go to recipe from now on. Very good in a bowl with beef chili over the top. Thanks for posting!!!
