My kids use to make this at school, we have it as an alternative to potatoes, or a light weekend lunch.

SERVES 4 (change servings and units)

Ingredients

Directions

    Drain corn and discard liquid.
  2. 2
    Put eggs, salt and pepper in a bowl and beat.
  3. 3
    Add flour and baking powder, whisk until smooth.
  4. 4
    Add corn and cheese.
  5. 5
    Stir.
  6. 6
    Put butter and oil in frypan, Heat until bubbly over medium heat.
  7. 7
    Drop corn mixture in spoonful lots into frypan.
  8. 8
    When golden turn and cook other side.
  9. 9
    Drain on absorbent paper and serve.

    tasty corn fritters... my toddlers liked them as they are, but the grown ups ate them with salsa. next time i think i would go with some of the pp's and add some onion and maybe some peppers.... they could use a little punch, but were still good!

    I made these as a quick and easy way to use up some canned corn I had in the cupboard. They turned out so lovely! Next time I might add some sauteed onions or chili powder to give them a little kick! But they were tasty as is with a little honey or ketchup (depending on your tastes!)
