I made these for two picky young boys who stayed with us while their dad was in the hospital. It went over so well I had to make another batch! They are also a great item to store in the fridge for snacks or lunch boxes. Eat cold or heat for 30 seconds in a microwave. Hope yor picky eaters like them as much!

SERVES 9 , 18 muffins (change servings and units)

    Combine mix and brown sugar, add eggs and milk stirring only until moistened.

    Stir in drained corn, hot dogs, and cheese. Batter will be thin.

    Fill paper lined muffin cups 2/3 full.

    Bake at 400 degrees for 15 minutes or until tops are brown.

    Serve immediately or refrigerate.

These have become a regular for us at the lake cabin during the summer. Both kids and adults love them and the kids can grab them and run off to the dock. I add extras of all the "goodies". I use a 15oz can of corn or about 2 cups of frozen corn, about 1 1/2 cups of cheese and about 8 hot dogs. I always use the turkey franks which might be a little thinner. I slice the hot dogs in half lengthwise first and then chop them so that I get more pieces throughout the muffins. Because of the extras, they don't raise quite as much so I fill the cups to about 3/4. I let them cool in the pan for a while too so that they hold together better when they come out. FYI, my mom makes these fat free and vegetarian. Krusteez makes a fat free cornbread mix and she uses EggBeaters and fat free cheese (Kraft). Smart Dogs makes a fat free soy dog. She really enjoys them (I'll stick with the regular version).

    I made these exacly as the recipe states and they were awesome!! We are going tailgating tonight for my high school sons football game and they are the perfect take along munchie i was looking for! Thanks so much

    we really enjoyed these! i used thawed frozen corn and added a little finely diced onion just to use it up. chopped up the hotdogs fairly small so there'd be hotdog in every bite. i used Cornbread Mix for the mix (i add a little extra sugar to it to make it more like Jiffy brand) and used the amount stated in the mix recipe to make 2 batches of cornbread. i think that actually doubled the amount of cornbread mix as there didn't seem to be enough hotdogs in there even though i used 6 instead of 5. could have used more corn and cheese too, but again i think the error was mine as i got 36 muffins, not 18! i also had to add more liquid to make it even mixable. regardless, these were pretty darn good and i'll be making them regularly for DD's lunchbox and a quick lunch for my 2yo. and next time i won't use so much cornbread mix!

    I did not have the corn, so I omitted it and we ate the muffins with broccolli and carrots on the side. I did not add the sugar, they were a tad "sugary" in our opinion, I think we would like these if we used regular cornmix though. We are not huge fans of the pre-packaged cornmeal mix. It was overall a quick recipe and very filling.
