Found this one on Top Secret Recipes. My daughter-in-law, is an expert on Chili's Chicken Enchilada Soup and swears this is exactly the same. The original recipe called for Velveeta, (which is a fairly salty), you can substitute shredded cheddar. I sometimes clean out all my odds and ends of cheeses for this soup. Making sure I do have the majority of the cheese being cheddar. Do not substitute the masa harina, as that is the key to the soup. The toppings are a nice touch, but not necessary.
