I love skillet dinners and this one is easy and tasty. Takes less than an hour from start to finish.

SERVES 4 (change servings and units)

Ingredients

Directions

    In a large skillet, add the soup, water, and butter; bring mixture to a boil.
  2. 2
    Add in the kielbasa and rice; lower the heat, cover and simmer 15-18 minutes or until rice is almost tender.
  3. 3
    Add in the peas and mushrooms; cover and simmer 15 minutes or until rice is tender and peas are heated.
  4. 4
    Season to taste if needed--I add a little cayenne.
  5. 5
    Sprinkle with cheese; cover and let stand for a few minutes until cheese is melted.

We love this meal! My boyfriend grew up eating this and suggested it one night after. This is his "go-to" meal on nights he cooks, and I love it too! Leftovers are great! A perfect meal to come home to when you're tired.

    I love skillet dinners, however, to me this just didn't cut it. I thought it was ok, hubby said please don't make that again.

    Very tasty and easy one dish meal! When I added the peas and mushrooms, I added an extra 1/2 cup water because it seemed to me the rice might dry out before it was finished. My range is electric and old and sometimes hard to regulate, so I probably had it simmering a bit too high. I also added about 1/4 tsp. of red pepper flakes. My dh and son loved it and both went back for seconds. Thanks again, Di! Your recipes are always winners at my house!

    This is an easy, good weeknight meal. I used double mushrooms, as I didn't realize I was out of peas, & brown rice, turkey kielbasa. I cooked as directed, except I sauteed the kielbasa in a bit of onion & cayenne pepper before adding it to the rice mixture. Really tasty! Thank you
