Growing up in an Irish household, this is how we liked to eat our mashed potatoes. This is true comfort food to me!

SERVES 6 (change servings and units)

Ingredients

Directions

    Boil the potaotes, drain and mash them with the cream and 4 T. of butter.
  2. 2
    Meanwhile, while potatoes are boiling, saute the shredded cabbage in 3 T. of butter until soft. Add scallions and cook for 2 more minutes.

    Combine the cabbage mixture with the potatoes and season to taste.

We loved it! It's a great combination of flavors and the cabbage gives a nice texture to the potatoes. My little girl even ate this. She said "what's this new stuff in here?" and I told her it was cabbage and she said "I'm glad it's not onions." I figured there was no reason to tell her about the scallions I used red skin potatoes and I added about 3 or four cloves of minced garlic when I fried the cabbage. Thanks Jackie!

    6 servings? It was way less than that. DH and I loved it and he ate most of it himself. Thank you for a wonderful recipe. It'll be a keeper. P.S. I garnished it with a few cabbages to show more of the colors.
